Roly’s Restaurant & Café originally opened in November 1992 and has over 80 members of staff working in front of house and in the kitchens to prepare the food that has made Rolys one of the most popular places to eat in Dublin.
John and Angela
John and Angela are hands on directors in the restaurant.Over the past 30 years they have opened many successful restaurants in Dublin. Blake’s in Stillorgan, Flanagan’s, Gallagher’s in the city centre and Oscar Taylor’s in Malahide among them. They are also directors of a sister restaurant in Jupiter, Florida.
Chef De Cuisine
Paul is chef de cuisine in Roly’s Bistro. Born in Dublin, he trained in Ireland and France, and worked in The Savoy Hotel with chef and author Anton Edelman and La Tante Claire in London before returning to Dublin in 1996 to join the bistro.
Hugh Hyland is head chef in Roly’s Bistro, He trained in Ireland and England, working with Michael Martin in the Clarence Hotel in Dublin and the Square Restaurant in London, before taking up his current position in Roly’s.
David has worked for Roly’s since he finished his training as a chef in Tallaght IT. He also holds an advanced pastry degree and has led our bakery team since he qualified. He has also completed a catering art degree and has a keen interest in the origin of food, photography and drama.
