All our Hereford beef is supplied by former Irish rugby prop John Hayes from Cappamore Co. Limerick.
The prime Irish Hereford cattle are fed a natural grass diet which gives the beef a rich red colour and also a fine grain marbling, the beef is matured on the bone, aged for 28 days before delivering to the restaurant.
