Pioneering quality since we opened our doors in 1992, the team at Roly’s Bistro has been synonymous with delivering outstanding food and excellent value and service to its customers.

Located in the heart of Dublin 4 Roly’s has stood the test of time and for over 30 years has been a great supporter of Irish food producers using fresh local and Irish ingredients in their dishes.

Owners John & Angela O’Sullivan and Chef de Cuisine Paul Cartwright have evolved the Roly’s brand over the past decades. Most recently, there has been the refurbishment of its fine dining Roly’s Bistro and the additions of both Roly’s Terrace Restaurant and Angie’s Wine & Cocktail Bar.

Roly’s has been the backdrop for many special family occasions over the decades and is a firm favourite of many celebrities who like to call Roly’s home when performing in or visiting Dublin.

John & Angela O’Sullivan

Born in Dublin, he trained in Ireland and France, and worked in The Savoy Hotel with chef and author Anton Edelman and La Tante Claire in London before returning to Dublin in 1996 to join the bistro - bringing so much of what he's learned to the Roly's table!
We are very proud of the three and thirty years of Roly’s Bistro Ballsbridge. From that first day in the autumn of 1992, we have had an amazing team of Chefs and Service Leaders.
