From first contact, to the experience at your event, each point of detail is meticulously planned and communicated to all the Roly’s Team. ‘Leave that to us’ is the Roly’s moto. Once you outline your plan – each single detail is shared with you and the Roly’s Team equally. You get full visibility of all the arrangements and have sign-off on each and every point of organisation. Menus, wines, pre-lunch and dinner drinks and special dietary requirements; menus headings with or without logos, place cards; flowers; cloakroom arrangements .. our checklists are end-less.

Tom O’Connell
Following a training and career path that included years in Switzerland, New York, Brussels and London, Tom returned to Ireland in 1996. Since then, he has never strayed from the restaurant world of Ballsbridge and Donnybrook. Empathy is at the forefront of his approach to organising. 'Listen to the customer - note carefully their expectations’ and take it from there. A 'somewhat' fluent french speaker, he is known to utter 'plus ça change, plus c’est la même chose' - 'the more it changes the more it remains the same' ... his policy towards organising events – as precise as learnt in his formative years !
